Ingredients:
For the Stir-Fry:
✅ 1 block (14 oz / 400g) firm tofu (pressed and cubed)
✅ 2 tablespoons cornstarch (for crispy tofu, optional)
✅ 2 tablespoons vegetable oil (divided)
✅ 1 red bell pepper (sliced)
✅ 1 cup broccoli florets
✅ 1 carrot (thinly sliced)
✅ 1 zucchini (sliced)
✅ 1 cup snap peas
✅ 2 cloves garlic (minced)
✅ 1 teaspoon fresh ginger (grated)
For the Sauce:
✅ ¼ cup soy sauce (or tamari for gluten-free option)
✅ 1 tablespoon sesame oil
✅ 1 tablespoon rice vinegar
✅ 1 tablespoon maple syrup or honey (for a hint of sweetness)
✅ 1 teaspoon cornstarch (for thickening, optional)

Instructions:
Step 1: Prepare the Tofu
1️⃣ Press the tofu using a clean towel or paper towels to remove excess moisture. Cut into bite-sized cubes.
2️⃣ Toss the tofu cubes in cornstarch (if using) to create a crispy texture.
Step 2: Cook the Tofu
3️⃣ Heat 1 tablespoon of vegetable oil in a large pan over medium-high heat.
4️⃣ Add the tofu and cook for 4-5 minutes per side, until golden and crispy. Remove and set aside.
