Vegan Apple Pie with Oat Base 🍏🥧

This delicious vegan apple pie features a nutty oat crust and a perfectly spiced apple filling. It’s naturally sweetened, dairy-free, and ideal for a cozy dessert! 🍂✨

Ingredients:

For the Oat Crust:

✅ 1 ½ cups rolled oats (blended into oat flour)
✅ ½ cup almond flour (or ground almonds)
✅ ¼ cup maple syrup or agave syrup
✅ ¼ cup coconut oil or vegan butter, melted
✅ 1 teaspoon vanilla extract
✅ ½ teaspoon cinnamon
✅ Pinch of salt

For the Apple Filling:

✅ 4-5 apples, peeled and thinly sliced (Granny Smith or Honeycrisp work best! 🍏🍎)
✅ 2 tablespoons maple syrup or coconut sugar (adjust for sweetness)
✅ 1 teaspoon cinnamon
✅ ½ teaspoon nutmeg (optional, for warmth)
✅ 1 tablespoon lemon juice (prevents browning & enhances flavor)
✅ 1 tablespoon cornstarch or arrowroot powder (thickens the filling)

For the Crumb Topping (Optional):

✅ ½ cup rolled oats
✅ 2 tablespoons coconut sugar or brown sugar
✅ 2 tablespoons coconut oil or vegan butter, melted
✅ ¼ teaspoon cinnamon


Instructions:

Step 1: Prepare the Oat Crust

1️⃣ Preheat the oven to 350°F (175°C) and grease a 9-inch pie pan.
2️⃣ In a bowl, mix oat flour, almond flour, cinnamon, and salt.
3️⃣ Stir in melted coconut oil, maple syrup, and vanilla extract, then mix until a dough forms.
4️⃣ Press the dough evenly into the pie pan, making sure to cover the bottom and sides.
5️⃣ Pre-bake the crust for 8-10 minutes until slightly golden, then remove and let it cool.

Step 2: Prepare the Apple Filling

6️⃣ In a large bowl, mix the apple slices, cinnamon, nutmeg, maple syrup, lemon juice, and cornstarch.
7️⃣ Stir well until the apples are evenly coated and slightly glossy.

Step 3: Assemble & Bake

8️⃣ Pour the apple filling into the pre-baked crust, spreading evenly.
9️⃣ If using the crumb topping, mix the oats, sugar, cinnamon, and melted coconut oil, then sprinkle over the apples.
🔟 Bake for 35-40 minutes, until the apples are tender and the top is golden brown.


Step 4: Serve & Enjoy!

🍏 Let the pie cool for 15-20 minutes before slicing.
