Traditional Pierogi Recipe 🇵🇱

Pierogi are Polish dumplings filled with various savory or sweet fillings. This classic recipe features a simple dough and a traditional potato and cheese filling, perfect for enjoying with sour cream or sautéed onions.

Ingredients:

For the Dough:

✅ 2 cups all-purpose flour
✅ 1 large egg
✅ ½ teaspoon salt
✅ ¾ cup warm water (adjust as needed)
✅ 1 tablespoon vegetable oil

For the Potato and Cheese Filling:

✅ 2 large potatoes (peeled and boiled)
✅ 200g farmer’s cheese or ricotta
✅ 1 small onion (finely chopped)
✅ 2 tablespoons butter (for sautéing onions)
✅ Salt and pepper (to taste)

For Serving:

✅ Sour cream (optional, for dipping)
✅ 1 tablespoon butter (for frying)
✅ Fresh dill or chopped onions (optional, for garnish)


Instructions:

Step 1: Make the Dough

1️⃣ In a large mixing bowl, combine the flour and salt.
2️⃣ Add the egg and vegetable oil, mixing well.
3️⃣ Gradually add warm water, stirring until the dough begins to form.
4️⃣ Knead the dough for 5-7 minutes, until smooth and elastic.
5️⃣ Cover the dough with a clean towel or plastic wrap and let it rest for 30 minutes.

Step 2: Prepare the Filling

6️⃣ Boil the potatoes in salted water until tender. Drain and mash them well.
7️⃣ In a skillet, melt the butter and sauté the onion until soft and golden.
8️⃣ In a bowl, combine the mashed potatoes, cheese, sautéed onions, salt, and pepper. Mix until smooth and well combined.

Step 3: Shape the Pierogi

9️⃣ Roll out the dough on a floured surface until about 1/8 inch thick.
🔟 Use a round cutter or glass to cut circles of dough about 3-4 inches in diameter.
1️⃣1️⃣ Place a small spoonful of filling in the center of each dough circle.
1️⃣2️⃣ Fold the dough over the filling to create a half-moon shape. Pinch the edges tightly to seal the pierogi.

Step 4: Cook the Pierogi

1️⃣5️⃣ Carefully drop the pierogi into the boiling water and cook for 3-4 minutes, or until they float to the surface.

Step 5: Fry and Serve

1️⃣8️⃣ Fry the pierogi in batches until golden and crispy on both sides.
