This smooth and comforting white asparagus soup is a beloved dish in Germany, especially during Spargel season. With its delicate flavor and velvety texture, it’s the perfect starter for any meal!

Ingredients (4 Servings):
✅ 500 g white asparagus (Spargel) 🌱
✅ 1 liter vegetable or chicken broth 🍵
✅ 1 small onion, finely chopped 🧅
✅ 30 g butter 🧈
✅ 30 g all-purpose flour 🌾
✅ 100 ml heavy cream 🥛
✅ 1 tsp sugar
✅ Salt & white pepper, to taste 🧂
✅ 1 pinch of nutmeg (optional)
✅ Fresh chives or parsley, chopped (for garnish) 🌿
Instructions:
Step 1: Prepare the Asparagus
1️⃣ Peel the white asparagus from just below the tip to the base and trim the woody ends.
2️⃣ Cut the asparagus into small pieces and set aside.
Step 2: Cook the Asparagus
3️⃣ In a pot, bring the broth, sugar, and asparagus pieces to a simmer.
4️⃣ Cook for 15 minutes until the asparagus is tender.
Step 3: Make the Roux
5️⃣ In a separate pot, melt butter over medium heat.
6️⃣ Stir in the flour and cook for 1–2 minutes, stirring constantly (this helps thicken the soup).
Step 4: Blend & Finish the Soup
7️⃣ Slowly add the broth with asparagus to the roux, whisking to avoid lumps.
8️⃣ Blend the soup until smooth and creamy.
9️⃣ Stir in heavy cream, salt, pepper, and nutmeg, then heat gently for another 5 minutes.
Step 5: Serve & Enjoy!
🔟 Ladle the Spargelcremesuppe into bowls and garnish with fresh chives or parsley.
Guten Appetit! 🇩🇪
This classic German soup is creamy, comforting, and perfect for Spargel season!
✨ Extra Tip:
👉 For a lighter version, use milk instead of heavy cream or replace part of the butter with olive oil!
