Ingredients:
For the Stuffed Peppers:
✅ 4 large bell peppers (red, yellow, or orange, halved and deseeded)
✅ 1 cup quinoa (rinsed and cooked according to package instructions)
✅ 1 ½ cups cherry tomatoes (diced)
✅ ½ cup cucumber (diced small)
✅ ⅓ cup Kalamata olives (sliced)
✅ ¼ cup red onion (finely chopped)
✅ 1 clove garlic (minced)
✅ ½ teaspoon ground cumin
✅ ½ teaspoon dried oregano
✅ Salt & black pepper (to taste)
✅ 2 tablespoons olive oil
✅ ¼ teaspoon red pepper flakes (optional, for spice)
✅ ½ cup crumbled feta cheese
✅ 2 tablespoons fresh parsley (chopped, for garnish)
Instructions:
Step 1: Prepare the Peppers
1️⃣ Preheat the oven to 375°F (190°C).
2️⃣ Slice bell peppers in half and remove the seeds. Lightly brush them with olive oil and place them cut-side up in a baking dish.
Step 2: Cook the Quinoa
3️⃣ In a medium saucepan, cook 1 cup of quinoa according to package instructions. Once cooked, fluff with a fork and set aside.
Step 3: Prepare the Filling
