Authentic Gazpacho Recipe 🇪🇸

Gazpacho is a classic Spanish cold soup, made with fresh tomatoes, peppers, and cucumbers. It’s the perfect refreshing dish for hot summer days! Here’s how to make it smooth, flavorful, and authentic at home.

Ingredients:

✅ 6 large ripe tomatoes (chopped) (preferably vine-ripened for best flavor)
✅ 1 red bell pepper (seeded and chopped)
✅ 1 cucumber (peeled and chopped)
✅ 2 cloves garlic (minced)
✅ ½ small red onion (chopped)
✅ 3 tablespoons extra virgin olive oil
✅ 2 tablespoons red wine vinegar (or sherry vinegar for authentic Spanish flavor)
✅ 1 cup cold water (adjust for desired consistency)
✅ ½ teaspoon salt
✅ ¼ teaspoon black pepper
✅ ½ teaspoon cumin (optional, for extra depth of flavor)
✅ 1 slice of stale white bread (crust removed, optional for creaminess)


Instructions:

Step 1: Prepare the Ingredients

1️⃣ Wash and chop the tomatoes, pepper, cucumber, onion, and garlic into small pieces.
2️⃣ If using bread, soak it in a little water for 5 minutes, then squeeze out excess liquid.

Step 2: Blend the Gazpacho

3️⃣ In a blender or food processor, add all the vegetables, soaked bread (if using), olive oil, vinegar, salt, pepper, and cumin.
4️⃣ Blend until completely smooth and creamy.
5️⃣ Add cold water gradually to reach your preferred consistency. If you prefer a smoother gazpacho, strain it through a fine mesh sieve to remove any remaining pulp.

Step 3: Chill & Serve

6️⃣ Transfer the gazpacho to a large bowl or pitcher, cover, and refrigerate for at least 2 hours. This allows the flavors to meld and the soup to become extra refreshing.
7️⃣ Serve cold, garnished with:

  • Diced cucumber, tomato, and bell pepper (for texture)
  • A drizzle of extra virgin olive oil
  • Toasted croutons (optional, for crunch)
