- 3 eggs, separated 🥚
- ½ cup all-purpose flour 🌾
- 1 cup vegetable oil (for frying) 🛢️
✅ Tomato Sauce:
- 4 ripe tomatoes, blended 🍅
- 1 small onion, chopped 🧅
- 2 cloves garlic, minced 🧄
- 1 cup chicken broth 🥣
- 1 tsp salt 🧂
- 1 tbsp vegetable oil 🛢️
✅ To Serve (Optional):
- Mexican rice 🍚
- Refried beans 🫘
- Fresh cilantro 🌿
Instructions:
Step 1: Roast & Prepare the Peppers
1️⃣ Roast the poblano peppers over an open flame or in the oven until the skin blisters.
2️⃣ Place them in a covered bowl for 10 minutes, then peel off the charred skin.
3️⃣ Carefully make a small slit in each pepper and remove the seeds.
Step 2: Make the Filling
4️⃣ If using ground beef, cook it with cumin, oregano, salt, and pepper.
5️⃣ Stuff each poblano with cheese or beef, then gently close the slit.
Step 3: Prepare the Batter
