German Beef Rouladen (Rinderroulade) 🥩🇩🇪

A classic German dish, Rinderrouladen are thin slices of beef rolled up with mustard, bacon, onions, and pickles, then slow-cooked in a rich gravy. This hearty and flavorful dish is traditionally served with red cabbage and dumplings—perfect for a cozy meal!

Beef roulades

Ingredients (4 Servings):

4 thin beef slices (about 150 g each, from top round or flank) 🥩
2 tbsp mustard (Dijon or German-style)
4 slices of bacon 🥓
1 onion, finely chopped 🧅
4 pickles, cut lengthwise into strips 🥒
Salt & black pepper, to taste
2 tbsp vegetable oil

🔹 For the Gravy:
1 carrot, chopped 🥕
1 celery stalk, chopped
1 tbsp tomato paste 🍅
250 ml beef broth 🍲
125 ml red wine (optional, for depth of flavor) 🍷
1 bay leaf & 1-2 cloves


Instructions:

Step 1: Prepare the Rouladen

1️⃣ Lay the beef slices flat and season with salt and pepper.
2️⃣ Spread a thin layer of mustard over each slice.
3️⃣ Place one slice of bacon, some chopped onions, and a pickle strip on top.
4️⃣ Roll up tightly and secure with toothpicks or kitchen twine.

Step 2: Brown the Rouladen

5️⃣ Heat the oil in a pan and brown the roulades on all sides. Remove and set aside.

Step 3: Make the Gravy

6️⃣ In the same pan, sauté the carrots, celery, and remaining onions.
7️⃣ Add the tomato paste and cook for 1 minute.
8️⃣ Deglaze with red wine (if using), then add beef broth, bay leaf, and cloves.

Step 4: Simmer Until Tender

9️⃣ Return the rouladen to the pan, cover, and simmer for 1.5–2 hours until tender.

Step 5: Finish & Serve
